yeah, basically this, "all y'all" exists because "y'all" doesn't necessarily always mean "you all" like it would suggest. You can be with 5 people, and only address 3 of them using "y'all", while if you say "all y'all", chances are you're talking to all 5 of em.
y'all versus y'alls just depends on who you're talking to and what they feel like saying at the time. Not like "y'all" versus "all y'all" is an exact science either

maybe not south, but I've known more than a fair share of people who use y'all on a normal basis (namely my mother's side of the family). Could just be area differences too, though.
